The laboratory runs under the direction of Professor Govaris Alexander and personnel, lecturers Pexara Andreana and Solomakos Nikolaοs. The laboratory consists of two areas and appropriate equipment for microbiological and chemical analysis of food. The laboratory also occupies research postgraduate students from graduate programs with participating faculty members. It also provides services to food companies in food analysis.

Research Activities

The antimicrobial effect of essential oils against food?borne pathogens in foods of animal origin.

The antioxidant effect of essential oils in foods of animal origin.

The occurrence of Shiga toxin–producing Escherichia coli (STEC) in foods of animal origin.

The behavior of Shiga toxin–producing Escherichia coli (STEC) STEC, Salmonella or other food?borne pathogens in foods of animal origin.

Aflatoxins in milk and dairy products.

Staphylococcus aureus and staphylococcal enterotoxins.

Modified air packaging.
